Ingredients:
250g
unsalted butter (I used Lurpak unsalted butter)
125g
icing sugar
1
egg
350g plain flour
Directions:
1. Cut the butter into small pieces and knead
well using a mixer or by hand.
2. Roll the dough into an oblong sausage, wrap
the dough sausage in baking paper and keep in refrigerator for 2 hours.
3. Cut the dough into thin 5mm slices, placing
each slice on a baking sheet with baking paper.
4. Bake the cookies in a preheated oven at 200°C
for 6-8 minutes until golden but not brown.
